OREO CHEESECAKE


Hi everyone my name's Kirsty and I love all things fabulous and if they sparkle as well that's a bonus! I want to blog about these fabulous things that I love and hopefully you do too! And what I'm totally loving at the moment is OREO CHEESECAKE!
Now I'm not particularly domesticated, actually I'm not at all so when I make up recipes I make sure they are as simple as physically possible otherwise I can't be bothered to do it! And this recipe tastes damn good so give it a try, let me know what you think and if you have fabulous cheesecake presenting skills why not show me a pic? ;-) As you can see in the pic my presenting skills aren't particularly amazing!!  I've no idea how many people it serves because my family are greedy so serves 4 in our household but I think in a normal family it should serve 8

INGREDIENTS
The Base
200g of Oreos (aka 2 packs) (with the centre filling put to one side)
90g butter
1 tbsp caster sugar

The Topping
300g cream cheese (I've been using Philadelphia)
200ml double cream
1 tsp vanilla essence
180g caster sugar
(The oreo centre filling)


Making The Base

1. Separate the oreos and place the biscuit part in a bowl (or cellophane bag) and scrape the oreo filling off the biscuits into a separate bowl and put the filling aside for later

2. Release all anger and stress and smash the Oreo biscuits into crumbs (as well as releasing stress this is also a fabulous arm workout )

3. Melt the butter (making sure you don't burn it)

4. Mix the butter, tablespoon of caster sugar and the biscuit together and then spread out into the dish you are using for the cheesecake and place in fridge for about 30 minutes to set

IN THE MEANTIME

Making the Topping

1. Whip the cream into firm-ish peaks and set to one side (I do the bowl over the head move) if you want more of an arm workout use your everyday whisk but if you are feeling lazy definitely go with the electric whisker = life saver! 
2.In a separate bowl add the cream cheese, sugar, vanilla essence and oreo filling and beat/whisk together (again electric mixer does the job fabulously!)
3. Mix the cream in with cream cheese mixture, apparently according to the foodies you should really fold it in before mixing it together but if having a lazy day go straight in with the electric mixer as I don't think it makes a difference!

TAKE THE BASE OUT OF THE FRIDGE AND SPREAD THE CREAM/CHEESE MIX ON TOP , PLACE IN THE FRIDGE FOR ANOTHER 30 MINS (unless you can't wait that long) EH VOILA!!
